Day 7 - Pizza Dough

New York Style Pizza Dough

6 cups Flour- all-purpose or bread
little less than 2 1/4 water
1 tsp instant dry yeast
2 1/2 tsp salt
2 tsp sugar
3 tsp olive oil

Place water in a large mixing bowl. In a separate bowl, mix salt and yeast into flour. Combine flour mix into water and mix until all the flour has been incorporated. Next, add oil and knead for 5 minutes. Divide dough into four equal parts and seal in a quart sized container or oiled/greased freezer bag and refrigerate for 3 days. Take dough out and make pizza shape*. Add sauce, cheese, and any other items you would prefer. Put into oven for 20 minutes at 500 degrees. Let cool and enjoy.

Science of the dough$$: Flour has the gluten that the dough needs to form, set up and be strong. Water brings all the ingredients together and encourages the production of gluten, which works with starch in the flour to bind the gluten. Yeast, a leavening agent, makes the dough rise by fermenting (digesting) sugars and starches. Fermentation causes the dough to rise by trapping gas bubbles inside it. Also, Putting the dough in the freeze will retard or slow the yeast activity.
